Viile Metamorfosis Via Marchizului Negru de Dragasani is a wine tribute to the Marquis Antinori, is the manifesto of the boldness and skill of the oenologist. Negru de Dragasani in Dealu Mare gives birth to an elegant wine, with multiple facets to be revealed.
Via Marchizului Negru de Dragasani has an intense cherry red colour with violet hues. The aromas are of black fruits like blackberries, sun dried tomatoes, with notes of figs, dark chocolate, black pepper and vanilla.
The strong body and soft structure complete the olfactory profile of this wine.
When sipped is fresh, juicy and flavourful, has round tannins and a long, lingering finish.
After harvesting, the grapes are gently destemmed and the berries are carefully sorted by hand on a conveyor belt. This removes any vegetable or other impurities.
Vinification was carried out at a controlled temperature of 28 - 30°C, with a maceration of at least three weeks, to obtain an intense color and perfect aromas. After maturation in barriques, during which malolactic fermentation was also completed, bottling and temporary storage in the cellar followed to perfect the taste.
For hedonists, we recommend serving it with stuffed wild boar muscles or with smoked wild boar sausages, cooked in the oven in wine sauce. The wine for the sauce should also be Negru de Dragasani. It can also be enjoyed with lasagna with bolognese sauce, hard, matured cheeses, bellows cheese, pecorino, gorgonzola, or cold Romanian snacks (smoked ham, sausages, drum, lebar, dried raw pork muscle).
Vegetarians can enjoy this wine with Ratatouille tart or eggplant meatballs with red sauce. We also recommend it with baked cauliflower or black lentil dishes.
