Averesti Diamond Zghihara is a wine with a special personality, an expression of one of the rarest local grape varieties - Zghihara. This variety is cultivated in the Husi controlled origin vineyards, where the climatic and soil conditions make the fruits surprise with noble, but also bold aromas. For Averesti Diamond Zghihara, only the grapes that have reached full maturity are hand-picked from selected plots, then crushed and macerated at a temperature of 10 degrees Celsius.
Subsequently, decantation is carried out by gravity, in the cold, and the liquor goes through the fermentation process for 21 days. The complexity revealed by Averesti Diamond Zghihara, however, is best revealed while the wine is kept on the fine sediment, a process that takes place over 25-35 days.
