A special sweet white wine, produced for the second time in this range in 2018, due to optimal maturation conditions for the botrytized Sauvignon Blanc variety.
An extremely sweet wine of this level requires dedication and courage. The grapes must be left on the vine until they are very ripe. Under the right conditions, the so-called Botrytis develops, allowing the grapes to dry out and begin to dehydrate, during which time they develop their specific aromas. The result is that more than half of the grapes are lost before they are even picked, but the gain for wine lovers is a concentration that lasts! The aromas and sugar in the grapes become extremely strong and when they are picked and pressed the result is a thick and sticky juice. This is fermented and allowed to retain its intense sweetness, which gives this wine its unique character.
It is golden with a very good clarity. Floral debut (acacia), followed by aromas of overripe fruit (pear, quince, melon), honey, cinnamon and a touch of vanilla. Very good acidity, athletic, round, balanced, velvety and consistent body, well-integrated alcohol.
Best served with: fine cheeses, Asian cuisine, foie gras, chicken satay, rice with almonds, sushi, desserts with hazelnuts, raisins, honey (cheesecake, baklava, Kataif) or panacotta.
