Carastelec Carassia Classic Brut is sparkling wine, pale yellow in colour that shines elegantly through the wine’s fine and persistent bead. Aromas of citrus and summer fruits (peach, apple and green pear) and notes of white flowers and brioche are intertwined with delicate herbal notes and autolytic nuances of bread crust and sourdough.
Structure and persistent effervescence give this wine character and nobility, while the minimal dosage added prior to final corking allows the delicate aromas to shine. Fine, persistent mousse and a long, complex finish with mineral notes.

Our sparkling wines are produced exclusively using the traditional Champenoise method, meaning bottle fermentation and ageing. In the case of CARASSIA sparkling wines, this involves extended bottle ageing of a minimum of twenty months, using traditional grape varieties. The entire winemaking process, from the first and second fermentations, through disgorgement, to bottling and labelling is carried out in our own winery using state-of-the-art equipment.
