“Grower-sparkling”

Sparkling wine reflects the terroir and the care and attention given to the vines throughout the year. Carassia comes from our own estate parcels, specifically selected and cultivated for sparkling wine production, after which the entire winemaking process takes place in our cellar. This represents a major advantage when it comes to quality control, as it remains 100% in our hands.

Sparkling wine is born twice: first, when the must becomes still wine, and a second time, when it becomes effervescent. Carassia is produced using the traditional method, with a second fermentation and extended ageing in the bottle. What gives these sparkling wines their uniqueness is the way these traditional grape varieties express themselves in this particular terroir. Grapes are harvested exclusively by hand and fermented in stainless steel tanks after gentle pressing, in order to preserve freshness and a firm texture.

The base wines, which since 2019 also include reserve wines from several previous vintages, are then blended and bottled. Making sparkling wine involves a series of precise decisions, from the selection and blending of base wines, to ageing time and the determination of dosage.

Traditional method, bottle ageing

Our sparkling wines bear the imprint of the terroir, while also reflecting our vision of quality and excellence, as well as our core values. Extended ageing on the lees is the quintessence of sparkling wine, during which the wine is born, for the second time, through a natural, almost “magical” transformation in the bottle. This process gives the wine a creamy texture, complex flavours and a festive effervescence defined by elegance and harmony.

Carassia is aged in bottle for a minimum of 20 months, and sometimes longer, depending on the wine’s evolution in bottle.

The name

The name Carassia, as well as the wine itself, expresses the uniqueness of its place of origin, the village of Carastelec and highlights the importance and added value of terroir in wine production.

The Carassia symbol is made up of five intertwined hearts forming a star, representing the five principles on which our winemaking philosophy is built: terroir, grape varieties, technology, time, meaning long bottle ageing and attention to detail in order to achieve superior quality, symbolised by the star at the centre of the logo.

Carastelec Carassia Blanc de Blancs Brut Sparkling Wine displays an elegant straw-yellow colour, a fine mousse and pronounced autolytic notes revealing fresh, fruity, floral, and biscuity notes. These distinctive autolytic characteristics result from an extended 22-month period of bottle ageing. Elegant aromas of brioche and yeast, along with the wine’s creamy texture are complemented by the freshness of ripe fruit, delicate citrus notes, and supported by the wine’s natural acidity, all balanced by the dosage.

The fine, persistent bead envelops the palate, lending the wine elegance not only visually but also through its refined texture. The finish is long and persistent, with notes of fruit and white flowers. A harmonious structure, with a perfect balance between freshness and maturity.

Our sparkling wines are produced exclusively using the traditional Champenoise method, meaning bottle fermentation and ageing. In the case of CARASSIA sparkling wines, this involves extended bottle ageing of a minimum of twenty months, using traditional grape varieties. The entire winemaking process, from the first and second fermentations, through disgorgement, to bottling and labelling is carried out in our own winery, using state-of-the-art equipment.
